INGREDIENTS
- 1 1/4 cups all-purpose flour
- 3/4 cup corn meal
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt (optional)
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg (beaten)
INSTRUCTIONS
- Heat oven to 400
- Lightly coat cast iron skillet with oil
- Combine dry ingredients
- Stir in milk, oil and eggs, mixing just until dry ingredients are moistened
- Pour into prepared pan
- Bake 20-25 minutes or until light golden brown and a toothpick comes out clean
